Piloncillo: Rich, Unrefined, Naturally Sweet
The traditional cane sugar behind Mexico’s classic desserts.
UNREFINED, TRADITIONAL SWEETNESS
Piloncillo, Sugar in Its Most Traditional Form
Piloncillo is unrefined whole cane sugar, pressed into cones and prized for its deep, molasses-like sweetness that white sugar can’t replicate. A staple in café de olla, champurrado, and traditional Mexican desserts, piloncillo brings authentic flavor straight from the cane. At Latin Specialties, we source piloncillo for consistent quality and rich flavor, case after case.
Rich, unrefined, and naturally sweet—piloncillo is sugar the traditional way.
Café de Olla,the Piloncillo Way
One pot, one cone, a whole lot of tradition.
Traditional recipe
Café de Olla with Piloncillo & Cinnamon
Mexico's classic clay-pot coffee: deep, lightly sweet and spiced, sweetened only with piloncillo.
Ingredients
- 6 cups water
- ½ cone (4 oz) Latin Specialties Piloncillo, chopped
- 2 Mexican Latin Specialties Cinnamon sticks
- ⅓ cup coarsely ground coffee
- 2 whole cloves and 2 star anise (optional)
- 1 strip of orange peel (optional)
Method
- Bring the water, piloncillo, cinnamon and the cloves, star anise and orange peel, if using, to a gentle boil in a clay olla or pot. Stir until the piloncillo has dissolved, about 8 minutes.
- Remove from the heat, stir in the coffee, cover and let it steep for 5 minutes.
- Strain through a fine sieve into clay mugs and serve hot, with the cinnamon stick for stirring.
TipUse a coarse grind and never boil the coffee itself: steeping off the heat keeps the cup rich instead of bitter.
