Street snack recipe
Duros Preparados (Street-Style Duros)
Freshly fried duros shaken with hot sauce, lime juice and chile powder: the crunchy, tangy snack sold at schools, fairs and street corners all over Mexico.
Ingredients
- 2 cups raw duros (wheat wheels or pellets)
- Neutral oil for frying
- Mexican-style hot sauce, to taste
- Juice of 2 Latin Specialties Limes
- Chile powder and a pinch of salt
Method
- Heat about 3 inches of oil to 365°F (185°C). Fry the duros in small batches, stirring, for a few seconds, until they puff up and turn light and crisp.
- Drain on paper towels and let them cool for a minute.
- Put them in a bowl or a paper bag, add the hot sauce, lime juice, chile powder and salt, and shake until coated. Serve right away.
TipAdd the lime and sauce at the last minute: duros soften quickly once they are wet.
