Agua de Limón con Menta (Mint Limeade)

The classic Mexican family agua fresca: tart lime, sweetened just enough and perfumed with fresh mint.

Ingredients

6 to 8 Latin Specialties Limes (about 1 cup of juice)
1 cup packed fresh Latin Specialties Mint leaves, plus sprigs to garnish
6 cups cold water
½ cup sugar, to taste
Ice, to serve
Lime slices, to garnish

Method

Blend the mint leaves with 2 cups of the cold water and the sugar for about 15 seconds, just until the leaves are finely chopped.
Strain into a pitcher, pressing lightly on the mint, then add the lime juice and the remaining 4 cups of water.
Taste and adjust the sugar. Chill for at least 20 minutes.
Serve over ice with lime slices and a sprig of mint.

TipBlend the mint only for a few seconds: longer blending turns the drink grassy and bitter.

Sopa de Albóndigas with Hierbabuena

Tender beef and rice meatballs in a light tomato broth with carrots, zucchini and green beans, scented with fresh mint.

Ingredients

1 lb ground beef (or half beef, half pork)
⅓ cup uncooked white rice
1 egg
3 tbsp chopped Latin Specialties Mint, plus sprigs for the broth
2 tbsp chopped Latin Specialties Cilantro
1 clove Latin Specialties Garlic, minced, and salt and pepper
8 cups chicken or beef broth
2 Latin Specialties Roma Tomatoes, ¼ Latin Specialties Onion and 1 clove garlic for the sauce
3 Latin Specialties Carrots, thickly sliced
2 zucchini, cut into chunks
1 cup Latin Specialties Green Beans, cut into pieces
Latin Specialties Limes and warm tortillas, to serve

Method

Mix the beef, rice, egg, chopped mint, cilantro, minced garlic, salt and pepper. Roll into walnut-size meatballs.
Blend the tomatoes, onion and garlic with a little broth, then fry the sauce in a large pot for 3 to 4 minutes. Add the remaining broth and a few mint sprigs and bring to a simmer.
Drop the meatballs into the simmering broth, cover and cook for 20 minutes.
Add the carrots and cook 10 minutes, then the zucchini and green beans and cook 10 minutes more, until tender.
Season to taste and serve hot with lime wedges, chopped mint and warm tortillas.
