Cinnamon: Warm, Fragrant, Naturally Sweet

The Mexican canela behind every good café de olla.

WARM SPICE, TRADITIONAL ROOTS

Cinnamon, the Spice Behind Every Warm Cup

Our cinnamon—true Mexican canela—brings a soft, sweet warmth and delicate bark that’s easy to grind or simmer whole. A staple in café de olla, horchata, and traditional desserts, this cinnamon is prized for its gentler, more complex flavor than common cassia varieties. At Latin Specialties, we source cinnamon for consistent quality and authentic flavor, case after case.

Warm, fragrant, and naturally sweet—cinnamon is comfort in every cup.

Classic dessert recipe

Arroz con Leche with Mexican Cinnamon

Creamy, gently spiced rice pudding, simmered slowly with whole canela and finished with a dusting of ground cinnamon.

Ingredients

  • 1 cup long-grain white rice, rinsed
  • 2 cups water
  • 2 Mexican Latin Specialties Cinnamon sticks, plus ground cinnamon to serve
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups whole milk
  • 1 tsp vanilla extract
  • A pinch of salt
  • ½ cup raisins (optional)

Method

  1. Bring the rice, water and cinnamon sticks to a boil in a heavy pot. Lower the heat, cover and cook for about 15 minutes, until the water is absorbed.
  2. Add the evaporated milk, whole milk and salt and cook over low heat, stirring often, for 25 to 30 minutes, until the rice is tender and the pudding is creamy.
  3. Stir in the condensed milk, vanilla and raisins and cook 5 minutes more. Remove the cinnamon sticks.
  4. Serve warm or cold, dusted with ground cinnamon.

TipStir often and keep the heat low: the rice releases its starch slowly and that is what makes the pudding creamy. It thickens as it cools, so loosen it with a splash of milk if needed.
