Quick pasta recipe
Brown Butter and Sage Pasta
Pasta tossed in nutty browned butter with crispy fresh sage leaves and Parmesan.
Ingredients
- 12 oz pasta (orecchiette, casarecce or fettuccine)
- 6 tbsp butter
- 20 fresh Latin Specialties Sage leaves
- ½ cup grated Parmesan
- Salt and black pepper
Method
- Cook the pasta in well-salted water until al dente. Save 1 cup of the pasta water, then drain.
- Melt the butter in a wide skillet over medium heat and cook for about 5 minutes, until it smells nutty and turns golden brown. Add the sage and fry until the leaves are crisp. Lift out a few for garnish.
- Toss the pasta in the sage butter with a splash of pasta water and the Parmesan. Season and top with the crispy sage.
TipWatch the butter closely: it goes from brown to burnt very fast.
