Guaje: Earthy, Distinctive, Deeply Traditional
The bold-flavored pod behind authentic Oaxacan mole.
A OAXACAN KITCHEN STAPLE
Guaje, the Pod Behind Oaxacan Tradition
Guaje pods hold small, garlicky-tasting green seeds prized in Oaxacan cooking, most famously in guaxmole and salsas. Their bold, earthy flavor is unlike any common herb, adding a distinctive punch eaten fresh straight from the pod or ground into sauces. At Latin Specialties, we source guaje pods for consistent quality, bringing authentic regional flavor to your kitchen.
Earthy, bold, and deeply traditional—guaje is a taste of Oaxaca in every pod.

Molcajete salsa recipe
Salsa de Guajes
Roasted tomatillos and jalapeños ground with toasted garlic and fresh guaje seeds: a rustic green salsa.
Ingredients
- 3 Latin Specialties Tomatillo
- 1 or 2 Latin Specialties Jalapeno
- 3 cloves Latin Specialties Garlic
- 3 tbsp fresh Latin Specialties Guaje seeds
- Chopped Latin Specialties Cilantro and salt
Method
- Roast the tomatillos and jalapeños on a hot comal until blistered. Toast the garlic and the guaje seeds in the same pan for a few minutes.
- Grind the garlic, guaje seeds and salt in a molcajete to a paste, then add the chiles and tomatillos and crush to a chunky salsa.
- Stir in the cilantro and taste for salt.
TipGrind the seeds by hand in a molcajete: a blender does not break them down finely enough.
